Roasted Sunchokes

  • 14 Sunchokes (Jerusalem artichokes) (Helianthus tuberosus) medium-sized, scrubbed not peeled
  • 10 cloves of garlic large ones halved
  • 4 sprigs Rosemary fresj
  • 4 Tblsp olive oil extra virgin
  • 1/2 tsp sea salt optional
  • black pepper fresh ground, to taste


  • Mix all ingredients. Bake at 375° for 45 minutes or until sunchokes pierce easily with a fork.
